Delish food. So far, we have made the Cowpeas/Black-Eyed Beans and Pumpkin Casserole. It was vegan, full of delicious non-spicy flavor (although depending on the curry powder mix you used, it could get spicy!), vegan and very low in fat.There are both cup and grams listed on each recipe.I love how the book has lots of colorful pictures. My only "tofu" with the recipe we had was that it did not explain what "mixed spice" was. I just added extra of the other spices instead.My sweetie and I like to cook up a big stew for the week. When added on top of couscous, this just fit the bill perfectly! Can't wait to have it for lunch tomorrow. Plus, it looks beautiful with wonderful autumn colors.I hope that my sweetie and I will continue our tradition of Sunday night cooking, by using this book. Next up might be Ribollita a "thick Tuscan soup" from Italy or Dobi- (peanut butter with) spinach and tomato from Zimbabwe. Yum!
